I didn't notice that. As usual I just looked at the picture and ignored the method. Anyway, I don't know why so many people seem to suggest peanut oil for Thai cooking. It's actually quite difficult to source peanut oil in Thailand so I guess the Thais don't use it much. The bog-standard vegetable oil is sufficient for most purposes. Funny! I didn’t notice that. Not helped at all by the way her ingredients are listed - apparently the only ingredient for the stuffing is a tablespoon of what she's decided to call "groundnut oil" but what most of her readers will probably know as peanut oil... :?
