Baby ribs in hoisin sauceThese are very like what you get in some Chinese restaurants called barbecued spare ribs. Sure, you can use the larger spare ribs but the baby ribs are juicier. And sure, you can barbecue them too. But this is an easier way to go about making this tasty snack.

What you need is some ribs, preferably separate, ie not still on the rack, and a jar of hoisin sauce. Put the ribs into a bowl and spoon some of the hoisin sauce onto them. Then make sure every rib is coated and place the ribs on a baking tray. Put them in a hot oven for about half an hour until done. Turn them over about halfway through the baking process.

Baby ribs coated in hoisin sauce in a baking trayI used a non-stick baking tray because it was the first to come to hand. However, the sticky sauce can knacker the Teflon coating a bit, so either use an old baking tray you’re not bothered about or use a stainless steel one.

    To make char sui (bbq meat) add oyster sauce, honey, soy, sesame oil and red rice vinegar to the hoisin.

    Cool. Thanks, I didn’t know that. We’ve got all the stuff necessary in the house already except for the red rice vinegar. Either I’ll have to keep my eyes peeled for it or perhaps substitute red wine vinegar?
